Pat's Christmas Cake Recipe

One quick post to share the recipe for my cake. I had a request from one of my followers so perhaps others would be interested. It is very easy to make and delicious to eat!

Pat’s Christmas Cake
4 ½ c. raisins, seedless                  2 ½ c. flour
2 c. white sugar                              1 tsp. cinnamon
2 c. water (substitute ½ - 1 c. rum or brandy)
¼ c. shortening                               ½ tsp. allspice
2 c. diced dates                               1 tsp. baking powder
½ c. cherries, diced                        1 tsp. baking soda
½ c. diced candied fruit (opt)      ½ tsp. salt
½ c. finely chopped nuts
2 eggs

Boil raisins for 5 minutes with sugar and water/rum. Then add shortening.
Separately, sift flour with cinnamon, allspice, powder, soda and salt over dates and other fruits/nuts.

Mix until fruit is all coated. Beat 2 eggs. Blend the floured fruit into the syrup mixture alternately with eggs until everything is combined. Bake at 300*F oven for 1 ½ hours. I did mine in the convection oven for 90 minutes and it was perfectly done. You can check to see if it is done earlier, when the sides separate from the pan or by inserting a toothpick. Makes 1 large cake pan or two loaf pans.

    1. Absolutely! I put one in the freezer and during the middle of the year pull it out for a treat. Sometimes I make a sauce and eat it like Christmas pudding. Thanks for the wishes, it is almost here.

  3. You had passed this recipe along to me a few years previous and I have made it with success many times. This year I didn't get around to it...no excuse really. Your pies look delicious as well. I did no baking at all this year, only had to prepare an Asian salad to take to the two Christmas dinners we participated in. It was likely better for the waistline anyway! If there are sweets here, Gerry can't resist the temptation.

    1. Good! I'm glad you agree that it is pretty easy. :) Yes, two of the pies went into the freezer to spread the goodness out. It also explains why I weigh more than you. You eat broth and I eat pie!
