HAPPY NEW YEAR!

Pilot Knob RV Resort, Winterhaven, CA

Wednesday, Jan. 1^st arrived and I wasn’t up long to partake in the welcome committee but Bill was. After our fun evening with friends, he just wasn’t tired and didn’t come to bed until the wee hours of the morning. I only woke once and noticed the bed was empty on his side and he told me today when he crawled in. He’ll be tired today!

I was up about 30 minutes before him but waited for him to rise and have his coffee. After he finished, he decided he didn’t want to walk. So, off I went and managed to get my mile and a half in. It was 43F/6C but the sun was up and the winds almost non-existent at that point. The walk was refreshing but I had overdone it with the layers. All jackets, were unzipped by the time I returned to the Suite.

At 9:45, I reminded him that we are starting a 90-day Keto challenge today. Oh yah, he said. So, it will be interesting to see how well we do and how long we can stick with it. We will do our best, that’s for sure. There will be some bumps along the way since I know I’ll be lacking in some of the right ingredients. We had eggs and mini sausages for breakfast around 10:30 and then after dishes, I walked up to the puzzle room.

 It was a good opportunity to concentrate on getting it finished, well, making a good effort at least. Kim and Ken were doing their laundry today so they popped in to lend a hand and when I got a text from Bill at 11 that we had company, I suggested that Ken finish it for us. Walking back, I knew from Bill’s text that our friend, Elva, whom we’d met last year, had stopped by for a visit. Such a lovely lady and so kind of her to think to stop around.

She is boondocking in the LTVA behind us with her husband so walked in. It was nice to chat and catch up a bit before she headed back through the gate to home. I took a walk back to the puzzle room to find that Ken had done as I’d asked. There were 2 pieces missing but I found one on the floor so we’ll have to mark the box to indicate the lost piece when it gets put away. Nothing worse than hunting for a piece that isn’t there.

There is quite a buggy culture here

I walked back and it was so warm out that I decided I was going to go back for a swim. The pool hasn’t been open, unless by request, simply because it has been too cool. Today, it reached 68F and the pool water was 84F. I changed into my bathing suit and rode my bike up this time. I park it inside the pool area so it doesn’t walk away without me. I was alone up there, perfect timing, and got into the warm water. I did a few laps of the short pool and then a bit of floating around on the pool noodle.

When I got out, I hopped into the hot tub for 5 minutes just to warm up and then stretched out in a lounge chair. The sun was awesome. I’ve missed that feeling over the last few days. I really would like to stop taking the Vitamin D that I take daily. Usually, the sun provides enough. At 2:30 I rode back home, changed into shorts and a tank. At the same time, Jo-Anne and Bob returned home so I took their key over and invited them to H.H. at our place.

I had the pool all to myself

By the time everyone came, the clouds moved in and the air cooled. I needed a sweater as did the other ladies while the sun came in and out over the next hour and a half. It was Tom and Deb’s last H.H. with us this visit so we all made sure to get a picture. It turned cool and we had to call it a day before 5. Our friends took their chairs and walked home. Bill and I came inside and I started our first ‘keto’ meal. LOL

I cooked a cut up chicken thigh in olive oil with red peppers, yellow peppers and celery chunks. According to the recipe, I added ingredients to make sweet and sour sauce. I’ve never done that before and since I was lacking some items so I had to improvise. Once it was ready, I had to decide how I was going to serve this. I didn’t have much choice so even though it isn’t keto, we each had about ¾ c of rice with our chicken dish. It was good and I think it is a step in the right direction.

After dishes, I slipped out across to the fence to get a picture of the beautiful sky. I almost missed it because we had our awning extended. 

Suggestions for if I can't use rice would be helpful

I tasted the chocolate mousse for dessert but Bill didn’t like it. Darn! Maybe tomorrow I’ll make the whipped cream and blend them together. That should help a bit. Tonight, we didn’t need anything extra. Bill went upstairs to watch a Hallmark movie and I watched Toy Story 3 downstairs. 😊

 This was a good day and by the looks of it, more warm weather is coming our way. I hope your first day of 2020 was a good one as well.
