And Indeed, We are Very Grateful.

On Thursday, Nov. 27th it was wonderful to wake up, look at the clock in the stillness of the bedroom and realize that it was 6:20 and everyone was still asleep. Big sigh, it was a great sleep. 😴

Good morning!

Bill got up and took Gibbs out for his early walk and I followed by 7. Getting up, I mean, not the walk. 😂 I had some steel cut oatmeal with cream and after Bill left for the field, I  began preparing the Cranberry Casserole I was taking to the dinner.

Into the garbage it went but it
did get the core out!

It was a success, as was the
Waldorf salad. 😊

I didn't cook it until later in the afternoon as I wanted it semi-warm. I worked on some greeting cards and it felt good getting back into my hobby. Kim surprised me yesterday with another full bag of design paper! OGh my, I love the choices I have now!

Gibbs and I went for our
afternoon walk

Gibbs and I took a walk to the corner of Riggles and Quail Trail, greeted Sue and returned home to do more quilling. Bill was home from the field at 11, did some 'plane' stuff and had a bite to eat. I had a banana to tide me over until meal time.

we have a visitor now. 

I mixed up the Waldorf Salad, first time ever, and was pleased with how it turned out. Bill had his snooze and then showered while I began cooking the casserole. Hmm, 30 minutes at 350F my eye!! By the time it was done enough, it had baked for about 75 minutes. Good thing I started early!

Ken and Kim arrived around 2:30 and at 2:45 we all walked over with our food dishes for Thanksgiving dinner at the clubhouse. It is never a big crowd but there sure was a lot of food from the small group of about 20 diners. What a selection!

the corner. (wait, I think Patsy did!)

Lots of food but
I wasn't overstuffed.
Ham, turkey, potatoes, gravy, dressing,
candied yams, green bean casserole, pasta salad,
root vegetables, broccoli salad, deviled eggs,
Waldorf salad, relish tray.
Pumpkin, apple, pecan and pineapple pie
plus cranberry casserol for dessert.

There were 6 of us at the round table and we had an enjoyable time with friends. It is nice for me, knowing many of the guests by name now and not feeling like an outsider. 😀 I'm not even sure what time it was when we walked back home with our leftovers.

I put the food and dishes away, Bill took Gibbs for a walk and we met over at Tom and Debs' for a shorter Happy Hour. At least until the sun set, and the sky around us was a gorgeous shade of pinks and purples. 

It was a lovely evening sky
but I could feel the cool air settling
into my body at 6.

Bill and I have a lot to be thankful for. This lifestyle, our family, our Canadian and American friends, and the opportunity to enjoy the warmth in the southwest climate. We do feel grateful also for our health and the kindness of those around us. Our second Thanksgiving dinner and even more blessings.

Last year's Thanksgiving evening.

We settled in for the evening and relaxed. No need for another meal! We reached a mild 73F/22C today, a partially cloudy day but oh, those clouds were purty!!

  2. Potlucks are always amazing with far too much choice and food, but oh boy, they are so good!
    I'll have to look for the recipe for your cranberry casserole - was it cake like or a pudding? Either it would be a nice addition.

  3. I love me a pot luck meal and right now they are few and far between in my life. It is a great life that we all have, whether one goes south for nicer weather, or are one of the others that stay and brave the cold and grey.

  5. It was a very nice Thanksgiving Dinner spent with friends. All the food was delicious and I heard one woman say if you leave hungry it is your own fault...lol Ending the day with a short Happy Hour and the pink sky all around was perfect.
