Pilot Knob RV Resort
On Tuesday, Dec. 14th I was awake at 5:30 and thought that was it for me and sleep. However, the next time I moved, a little pooch was crawling across my belly and it was 6:35. 😉 This time, I felt wide awake and quite hot so took him out and then sat in my recliner to cool off. It was a mild 57F/14C outside. We’d seen the forecast for high winds after 5 pm and until then, a bright sunny day with a high of 73F/23C.

Getting
the best of the day, Gibbs and I then took a walk and explored a different
area. He knows where the two gates are that lead out into the ‘free’ areas so
pushes his nose against them to go through. We walked on the west side of the
park first and along the road behind the park and then up the east side and
back into the park. I’m sure his day was made when he met little Gabby and
Allie. They greeted each other, us, as owners, and moved on. ♥

When we
got back, Bill and I had our coffee and tea together and tossed around ideas
for our future travel plans. It’s nice to have ideas of what we want to do,
what we can afford to do and go from there. There was an hour-long Balance
& Strength exercise class at 9, with Diane, and I debated going but it is
like Yoga for me. I’m not really keen on sitting in a class doing stretches. In
the end, I didn’t go.
My excuse
is that Gibbs was on my lap at the laptop and you know how I love that! 😊 There are enough walks throughout our day and they give me
more pleasure anyway. So, I got cream cheese out of the fridge to soften and
found a recipe for some Chocolate chip cheesecake bars. Yummy, they sounded
good and I had all the required ingredients.
This is the puzzle I finished today I only helped with these two but
I love the pictures of bothMy favourite for some reason ♥
While
they were baking, I made a Vanilla instant pudding mix and poured it into a
pecan pie crust to set. With whipped cream, it will be nice for an alternative.
That all used up all but 1 egg and I’d already decided no bacon and eggs today anyway.
Bill made himself a sandwich and I made myself a chicken & lettuce wrap for
lunch. It was good and I have a bit of the chicken left for one more day. FYI, both recipes turned out great.

With the
dishes washed from my mess, I went to the puzzle in the clubhouse at 12:30 for
an hour and a half. There were 4 people playing cribbage and the managers were
setting up for a staff Christmas party tonight so I quietly worked away and
finished the ongoing puzzle. There are 3 done now on the table so I’ll ask Josh
tomorrow afternoon to let me retrieve another one from the locked room. 😊

Because of the forewarning about high winds, when I returned, Bill and Gibbs were putting our chairs away for the day. It has already increased its velocity a lot since this morning so I remained inside with my book. Bill and Gibbs were upstairs watching tv and having their snooze. 😊 ♥ Seemed like a good time to have my cup of tea. The book is still good so I managed to get a couple more chapters in before I needed to start supper.

Big
sausages cooked in Madame IP with spaghetti sauce, red and yellow peppers and
onions. I’d added a cup of broth and once it was all done, 20 minutes later, I
cut the meat for serving. I had a potato leftover so fried it up for Bill and
cooked us some mixed vegetables. I really enjoyed the whole meal but Bill didn’t
want to try the sauce. That was disappointing since I made a pot of it but I
guess we’ll have it with spaghetti some night. For dessert we had a piece of the pie but the whipped cream didn't thicken up in my little Pampered Chef 'blender'. 😕 I'll beat it properly tomorrow.

After
dishes, the final night for The Voice finale began so we were able to watch it
together. This was a good day for all of us.
The pie was good, didn't look too professional
but tasted yummy.

The wind came earlier then predicted up here, also. Tom was glad he had put everything in this morning. We move into Shady Lane tomorrow so not much left to do in the morning. Reading today's and yesterday's blog says you really are having a good time there. The morning sky looks beautiful. I am a firm believer in it is all about the taste though it actually looks good..😊.

That Gibbs sure is a good watchdog and Looks regal while doing it. Bill must be feeling pretty confident if he turns down your sauce. ☺

DeleteBill has his own mind on what he likes and what he wants to try. I guess I wasn't surprised that he didn't try it.
I think baking is the perfect way to pass the time, especially if it involves pie. Love the last puzzle!! And I love how our puppies become our protectors ... the watch pups!!

ReplyDeleteI like the idea of doing sausage in sauce with the peppers. I bet it would be a good filling for a sub sandwich too (though I know you don't eat bread very often).

Sausage in the sauce was wonderful. I love the taste. I eat enough bread so yes, I agree that it would be great in a sub. :)

DeleteEverything looks great. The sausage and sauce looked good to me. Cindy sits on the sofa and looks out the window all day long. She lets me know when a "ghost " passes by. You know... those times when they bark but there's nothing to bark at! Elva
